BLT Salad

SERVINGS

6 to 8 servings scale / convert

INGREDIENTS

1 head of lettuce, cut-up
8 cooked slices of bacon, crumbled
2 hard boiled eggs, chopped
2 tomatoes, diced
2 cups cubed chicken breast--optional

Dressing
1/2 cup mayonaise
1/4 cup barbeque sauce
1 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper

INSTRUCTIONS

Mix all salad ingredients in a large bowl.

Mix dressing ingredients together then add to salad.

CHEF COMMENTS

This salad is great without the chicken breast, but makes a meal when you add the chicken.
