MY Banana Bread/Muffins

SERVINGS

12 to 15 servings scale / convert

INGREDIENTS

2 eggs
1/2 cup Apple Sauce
1-1/4 cups Brown Sugar
2 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
2 tsp. Vanilla
2 cups Flour
4 md. Bananas (mashed)
1/2 cup raisins (optional)

INSTRUCTIONS

Pre-heat oven 340 to 350 depending on how hot your oven gets (ovens vary). Mix all WET ingredients together in bowl. Mix all DRY ingredients in another bowl (make sure you crush all the brown sugar lumps). Mash bananas and put in WET mixed bowl. Spray Muffin pan or Bread pan with cooking spray. With a large mixing fork (not whisk because it's too weak to handle mixture & it gets stuck in the middle of the whisk) ADD WET mixture to DRY mixture WHILE stirring and folding together. Once completely combined, pour into muffin pans or bread pan. Put on MIDDLE rack in oven.

CHEF COMMENTS

12 muffins - 30 to 40 minutes (yields 12-15 muffins depending on how full you want them)
1 regular loaf pan - 1 hour
