Smartie Cake

SERVINGS

4 to 8 servings scale / convert

INGREDIENTS

4 tbsp. Self Raising Flour
4 tbsp. Granulated Sugar
4 tbsp. Unsalted Butter
2 eggs
2 handfuls of Smarties (or other chosen sweet/decoration)

INSTRUCTIONS

Melt the butter and stir in the sugar till combined
Sift in the flour and gently fold (figure of 8 is preferable)
Once it is light and fuffy, fold in half of the smarties, leaving the rest to decorate.
Pour into a greased/lined baking tin and bake for 40mins till the top is golden.
Leave to cool.

DECORATION:
make a small amount of icing (icing sugar and water) using a dye to make the preferred colour.
Smash up half of the smarties left over and sprinkle over, and place the rest in random places.
